ADD SPICE TO YOUR LIFE


Indian Spiced Roasted Vegetables

*  1 cauliflower head cut into small bite sizes
*  6-8 small round gold potatoes,unpeeled chopped
    into cubes
*  1 large or 2 small sweet potato, peeled chopped 
    into cubes (yams or sweet potatoes)
*  1 cup of coconut oil
*  2 tbsp of whole cumin seeds/1 tsp of sea salt

Preheat the oven to 450 degrees,line 2 baking sheets
with parchment paper.
Chop the cauliflower and gold potatoes.
Peel and chop sweet potato,combine the vegetables
and evenly divide between the 2 baking sheets.
Spoon coconut oil among the vegetables and mix by hand.
Roast until the vegetables are caramelized on the outside
and soft and delicious on the inside about 1 hour.
Halfway through , stir them with a metal spatula and rotate
the sheets from top to bottom.

Tip: You can add your own vegetables of choice or add
to recipe of vegetables.

Serves 6
