SCRUMPTIOUS BREAKFAST CAKES


 HIGH PROTEIN PANCAKES

* 1/2 Cup of quick gluten-free oatmeal
* 1/2 Cup of cottage cheese
* tsp of vanilla extract and cinnamon
* 2 eggs 

Puree all ingredients in a blender
Heat on medium a non-stick skillet,
with 1/2 tsp of extra virgin oil
Cook on pancakes till golden brown
on both sides.
Top with fresh berries of your choice

*Tip heat berries for a minute 
to create a smooth syrup
